  • Speedy Minestrone Soup

    Ingredients

    (serves 4)

    • 2 teaspoons Olive Oil
    • 1 onion, finely chopped
    • 1 large carrot (4oz, peeled and diced)
    • 2 celery stalks, trimmed and sliced
    • 1 bouquet garni
    • 14 oz canned low sodium chopped tomatoes
    • 2 oz whole wheat pasta shells
    • 3 1/2 cups low sodium vegetable stock
    • 1/2 small cabbage
    • 8 oz pepper

    Directions

    Heat Oil in large pan, add onion, carrots and celery and saute gently for ~5minutes stirring frequently. add bouquet garni with the tomatoes. Add 7oz water to the pan. Add pasta with the vegetable stock and bring to a boil. Reduce the heat to a simmer and cook for about 12 minutes, or until the vegetables are almost tender.

    Discard any outer leaves and hard central core from the cabbageand shred. Wash well and add to the pan with pepper to taste. Cook for an additional 5-8 minutes, or until all the vegetables are tender, but still firm to the bite. Serve in 4 bowls.
